Balsamic Steaks- Whitney

Ingredients:
1/2 C balsamic vinegar
3 T sugar
2 T butter
6 (5-6 oz) filet mignon- 1 inch thick
Salt and fresh ground pepper to taste.
2 oz. fresh goat cheese.

Directions:
Boil balsamic vinegar in heavy sauce pan over medium high heat until reduced to 1/3 C and thickened. Stir occasionally for and boil about 10-15 minutes. Melt butter in heavy large skillet over medium high heat. Sprinkle steaks with salt and pepper and cook about 5 minutes each side for med. Transfer to baking sheet. Crumble cheese over top and broil just until cheese melts (1 min). Transfer to plate and drizzle with balsamic sauce.
