Flour Tortillas


In my quest to make a Cafe Rio Pork salad clone, I stumbled across this tortilla recipe on allrecipes.com (got to give credit where credit is due, right?). Well it's great, and I wanted to share it with all of you. This makes about 8 tortillas, so double it up if you're feeding a crowd.

2 C all purpose white flour
1/2 tsp salt
1 tsp baking powder
2 T butter
3/4 C water

Whisk the flour, salt and baking powder together. Add the butter and mix with hands until it resembles corn meal. Add water. Flour the counter lightly with some flour and knead until the dough becomes an elastic ball. (1-2 minutes). Heat a nonstick skillet on medium. Cut a piece of dough and roll into a small ball (about a golf ball size and it may vary depending on how big you want your tortillas). Roll out on the counter until very thin, but not tearing. Place on skillet and cook on each side until it browns the slightest. I don't like my tortillas crunchy but if you do, by all means cook longer. I do about a minute on each side. Last I melt some cheese on one side, like I said I'm trying to do a cafe rio clone. But these tortillas can hold on their own without the cheese. They're great! But don't be alarmed that they don't bubble up while cooking, they stay pretty flat.
